TEA BREWING GUIDE

STYLES OF TEA

WHAT IS TEA?

traditionally the word ‘tea’ refers to any drink made from the leaf of the Camellia sinensis plant. White, green, oolong and black tea are all made from the same plant but processed differently. Today, tea is loosely used to refer to any infused beverage.

WHY LOOSE LEAF TEA?

loose leaf allows you to blend more than one tea to create your own personal distinct experience. every cup regardless of size can be made to the perfect strength (versus tea bags which can’t be blended and the strength of each cup is predefined).

FERMENTED LEAVES

Black Tea (eg English Breakfast):

made from the Camellia sinensis plant. Picked as a green leaf, fermented (turns black in colour), dried. Compared to other teas, black tea is high in caffeine. Releases bitter tannins when over brewed which is frowned upon by people that frown.

Rooibos:

made from the leaves of the Aspalathus linearis plant (legume family) which is indigenous to the Western Cape (South Africa). Picked as a green leaf, fermented (turns red in colour), dried. Contains no caffeine and is high in antioxidants. The longer it brews the more antioxidants are released.

DRIED / UNFERMENTED LEAVES

Green Rooibos:

made from the leaves of the Aspalathus linearis plant (legume family) which is indigenous to the Western Cape (South Africa). Picked as a green leaf and dried (no oxidation/fermentation). Contains significantly high levels of antioxidants. An ideal supplement for healthy aging with cancer fighting qualities. No caffeine, no tannins and never gets bitter (unlike green tea). Draws to a green / orange colour and tastes like green tea but sweeter and creamier. Very much the hidden gem – we plan to change that!

Green Tea:

made from the Camellia sinensis plant. Picked as a green leaf and dried (no oxidation/fermentation). A delicate and misunderstood tea. Only draw for 1-2min in 70’C (add 20% cold water to boiled water). High in
antioxidants although contains caffeine. Like wine, the real connoisseur can tell where in the world a green tea was grown.

White Tea:

made from the Camellia sinensis plant. So subtle it makes a green tea appear bold. The process is similar to green tea except white tea is made from the very young delicate new shoots which are traditionally hand plucked.

SEMI FERMENTED LEAVES

Oolong:

made from the Camellia sinensis plant. Is partially/lightly fermented and shares the characteristics of green and black tea.
